Almond Sweet Potato Pizza

This is a great pizza that is full of complex carbs, high quality protein and fats. Its gluten free and totally vegan.

Ingredients:

- 1 cup of almond meal or 1 cup of finely ground almonds

- 1 cup of mashed sweet potatoes (roughly 2 small sweet potatoes)

- 1/4 cup of flax seed oil

- 2 medium tomatoes, sliced

- half of a red onion chopped

- 1-2 cups of fresh baby spinach

- roughly 1 cup of rice cheese (mozzarella flavor)

- sea salt to taste

Preparation:

- Preheat oven to 300 degrees

- lightly spray pizza pan with olive oil spray

- in a large bowl mix almond meal, mashed sweet potatoes, flax seed oil, and sea salt, mixing thoroughly

- place pizza dough on baking sheet and cover with plastic wrap in order to form the crust, with

  rolling pin or fingers carefully flatten dough to about 1/2 inch thickness

- lightly brush crust mix with flax oil

- bake at 300 degrees for about 20 minutes or until dough becomes light brown and firm then remove

  from oven

- top dough mix with onions, tomatoes and spinach, then cheese

- bake at 300 degrees for 20-25 minutes more

- Enjoy delicious pizza
