Chocolate Banana Pancakes
Good afternoon. This is a recipe I adapted from Brendan Brazier’s book Thrive: The vegan nutrition guide to optimal performance in sports and life. They are great for breakfast, lunch or dinner ( I love breakfast for dinner ). They are loaded with great protein, healthy fats, and are gluten free and vegan. Give them a try.
Ingredients:
- 2 cups of water
- 1 banana
- 1/4 cup of cacao nibs
- 1 cup of almond meal
- 1/2 cup of raw oats
- 1/4 cup of chocolate hemp protein
- 1/4 cup of ground flax seeds
- 2 teaspoons baking powder
- 1 teaspoon allspice
Blend water, banana, and cacao nibs thoroughly in a blender until water is brownish in color. Combine all dry ingredients in large bowl, then add water mix. Mix thoroughly. Let mixture sit for about 10 minutes or until it thickens up. Over medium heat, heat 1 tablespoon of coconut oil. Cook over medium heat until pancakes are cooked through ( roughly 5-7 minutes per side ). Enjoy with raw honey or raw agave nectar.
