Great breakfast scramble. Full of great protein, healthy carbs, and a little spicy.
Cook one sweet potato for 5 minutes in microwave. Combine 1 soy breakfast sausage, 1/2 can of black beans, 6 sliced mini peppers, 2 cups of spinach, 8 oz package of sprouted tofu-cubed, 1 cup of baby portobello mushrooms, and sweet potato-cubed in a large skillet. Add taco seasoning, I use Trader Joes taco seasoning. Cook for about 7-10 minutes. Enjoy.
